Strawberry and Smoked Pepper Shrub

Ingredients

SERVINGS: Makes 1¼ cups shrub syrup
For the Shrub:
  • 1 cup apple cider vinegar
  • ½ cup Bourbon Smoked Sugar
  • 2 tablespoons Bourbon Smoked Pepper
  • 8 ounces (about 2 cups) fresh strawberries, hulled and sliced
To make Drinks/Cocktails:
  • Sparkling water
  • Vodka
  • Ice

Instructions

In a small saucepan, combine the apple cider vinegar, smoked sugar and smoked pepper. Heat over medium-high heat and stir to dissolve sugar. Add the strawberries to a clean quart container or jar with a lid. Pour the vinegar mixture over the strawberries, cap the lid and shake to combine.

Allow mixture to sit in the refrigerator for 2 days, shaking well once a day. Strain the shrub through a fine mesh sieve into a clean jar or container. 

To make a non-alcoholic drink, fill a tall glass with ice. Add 1-2 tablespoons shrub syrup (or to taste) and fill with sparkling water to make a refreshing drink.  Add 2 ounces vodka (before topping off with sparkling water) to turn this into a cocktail. Garnish with a fresh strawberry and a sprinkling of Bourbon Smoked Pepper. Extra syrup will keep in the refrigerator for 2 weeks.
