Sneak more veggies into your familiar diet 

How close do you come to eating the USDA-recommended five to 13 servings of fruits and veggies every day? If you are like most of us, your answer might be “not very.” 

The secret to incorporating enough vegetables may not be eating more, but eating smarter. Sneaking servings of fruits and veggies into what you are already eating is a fun challenge for making sure you get what your body needs. 

Whether that is swapping your favorite chicken fried rice for chicken fried cauliflower rice, or throwing some spinach into your chocolate protein smoothie, take what you are already doing and bring it to the next level. 

These recipes focus on two versatile veggies that take on lots of flavor and pack tons of essential nutrients and vitamins our bodies crave and need. If it weren’t for their vibrant telltale color, you would hardly guess beets are a main ingredient of these ice cream and falafel recipes.
