- 1 pound cherry tomatoes (or other small tomatoes)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 to 2 teaspoons minced fresh garlic
- 2 to 4 tablespoons diced kalamata olives
Heat oven to 400°F. Combine tomatoes, olive oil, salt and garlic on a wide sheet pan and stir to distribute ingredients evenly. Roast for 10 minutes, stir and roast 10 minutes more. Remove from oven and sprinkle with olives. Serve hot, warm or cold.
