Nena’s Cardamom Coffee Cake

Ingredients

  • ¾ cup scalded milk
  • ⅓ cup very soft butter
  • ½ cup sugar
  • ½ teaspoon salt
  • 20 cardamom seeds
  • 2 whole eggs, well beaten
  • ½ teaspoon vanilla
  • 1 ounce yeast combined with 1 tablespoon sugar, dissolve
  • 3 cups sifted bread flour

Instructions

Pour scalded milk over butter, sugar and salt. When completely melted add well-beaten eggs slowly. Add vanilla. When liquid is lukewarm add dissolved yeast and cardamom. Mix well and add flour gradually, beating until dough is smooth and too stiff to mix with spoon. Turn dough out on floured surface and knead gently for 2 or 3 minutes. Only add enough flour to manipulate dough using very little pressure. Place dough in a greased bowl, cover and let stand in a warm place. 

When doubled in size turn out on lightly floured surface and knead for about half a minute. Place again in greased bowl, cover and let double in size. After second rise turn dough out on lightly floured cloth and shape 3 long sections and braid. Apply an egg white wash and let rise for a final time for at least an hour. Bake at 425° for 15 minutes.
