Fresh veggies, rich memories served on paper plates.
- 1 whole chicken, cut up (preferably fresh, pasture-raised chicken from a farmer you know and trust)
- Organic canola or safflower oil
- 1 cup Heinz ketchup
- 1 cup white vinegar
- Juice from 1 lemon
- 1/4 cup sugar
- 1 teaspoon Tabasco sauce
- 1 tablespoon butter
- Salt and pepper to taste
Salt and oil chicken pieces with organic canola or safflower oil.
Combine all sauce ingredients, except butter, in a small sauce pan. Bring to a boil, then reduce heat, stirring until sugar is dissolved. Add butter, stir until melted. Salt and pepper to taste.
Grill chicken pieces or bake in oven, basting with barbecue sauce during the last 15 minutes. Serve extra sauce and paper towels on the side.
