Harvest chef Jeff Dailey share some of their recipes using ingredients in season at farmers’ markets.

The recipes and techniques that we have included here are ones that we find ourselves cooking at home when we can. Contrary to popular belief, most chefs cook very simply at home and these recipes are a reflection of that. They are straightforward, bold flavors with a good eye for technique. Basically, we just adapt what we do at Harvest into a more streamlined version that takes less time and dirties less dishes. The most important part is to make sure that you start with the highest-quality ingredients that you can find. After that, its just a matter of letting those beautiful products speak for themselves.

Working at Harvest offers access to some of the finest products in the area and we take full advantage of that. Developing relationships with local farmers is the most crucial aspect of developing our cuisine, which is why we take extra-special care to have good relationships with all of our farmers. We visit local farmers’ markets every Saturday to keep in touch with our purveyors. This kind of hands-on approach has led to us finding lots of different products that we wouldn’t have known about otherwise. I would encourage anyone and everyone to stop by their local market and just have a stroll around. You never know what you may find, who you might meet, or what beautiful food you could be taking home.
